My name is Ted Wolff, Gluten-Free Master , Celiac and the main contributor, author and driving force behind the content of this blog, as well as the online training classes and courses you will find here under GF Diner Pro.
Being a pioneer in the world of gluten free food development, manufacturing, distribution and education from the beginnings in the very early 1990’s throughout the decades to this current date, I am very much looking forward to continue to meet you along our gluten-free journey, through this blog and I trust, in person from time to time.
I am the very lucky and blessed husband of Chris, my lovely, brilliant, sweet and charming, gorgeous supportive Wife and together we enjoy everything Food, Music, Travelling and sharing lots of this Awesome with our wonderful 6 children (All brilliant adults 🙂 ).

Together , Chris and I (both living gluten-free) opened a restaurant which provided a completely gluten-free dining experience , GF Diner.
When it comes to living gluten free, finding safe and delicious restaurant fare can be a frustrating effort. This is true for anyone searching for a safe place to eat and any business and restaurant facility that is interested and willing to offer the same.

In order to provide a safe and contamination free environment, it is a definite Must to have a dedicated gluten-free kitchen and dining space or area. Those were the imperatives when we opened GF Diner ! We offered a well-balanced menu, including many customer favourites, such as:
- Waffles, pancakes, French toast,crepes,
- Paninis, pizzas,
- Muffins, cakes, cupcakes,
- Breads and buns, sandwiches,
- Sausages, hamburgers, entrees and more.

All of our dishes were 100% gluten-free and delicious! In addition to our dine-in experience, we also offered take-out and other products for sale. After a few years we closed the restaurant facility, to focus solely on the need to share and further professional know-how amongst food-industry peers, medical professionals and private consumer alike.

Education– and Awareness- building about gluten-free and other allergen -issues…

To increase Awareness and to teach about Celiac, Celiac Disease, Gluten Intolerance, Gluten replacement, as well as other allergens, to anyone who wants to learn.
By sharing our accumulated professional expert knowledge of the last few decades in a clear, informative and entertaining way, we strive to accomplish these goals.
